The main processing stages of braided mozzarella can be summarized as follows:
– the curd is obtained;
– the curd is chopped and sprinkled with water at an optimal temperature of about 80°C–90°C;
– the curd becomes compact and elastic thanks to the high temperatures;
– the fundamental step of stretching the curd is carried out by gently mixing the pasta filata until it becomes completely homogeneous;
– removal of excess water;
– the pasta filata is pulled from both ends and then braided, creating a braided mozzarella with a sweet, authentic flavor.
