The main processing stages of stracciatella are as follows:
– Whole cow’s milk is heated.
– Rennet is added to allow the mixture to coagulate.
– The curd is broken to release the whey.
– The curd is subjected to stretching with boiling water.
– The stretched curd is “shredded” by hand and immersed in fresh cow’s cream, which makes the cheese creamy, just as we know it.
