The processing stages of Provola dei Monti can be summarized as follows:
– First, the cow’s milk is heated to a temperature of 30°C; this phase continues until the milk coagulates.
– Next comes the stretching phase of the coagulated milk: through stretching, the provola begins to take on its typical shape. The Provola dei Monti is now ready for aging.
– Once stretched, it is time to smoke our provola: this phase is carried out by exposing the finished product to straw smoke for about 10 minutes.
