Mixed ricotta is perfect for those looking for a unique product with the addition of high-quality cream. Thanks to its creamy and soft texture, it is particularly suitable for making desserts and cakes. Ricotta is not actually a cheese, but rather a very fresh dairy product made from whey. It can be used as an ingredient or eaten on its own with jam or cream.
The special processing of milk, with the addition of cream as traditional by our cheesemakers, gives the ricotta an intense flavor, ideal both for home use and for pizzerias and restaurants. The mixed ricotta from Latteria Sorrentina is produced using traditional preparation methods, always delivering a typical full and flavorful taste, as well as a light, milky aroma.

The main processing steps for mixed ricotta with cream can be summarized as follows:
– The whey for the mixed ricotta is obtained from pecorino and sheep’s milk cheese.
– Next, it is heated in a boiler to a temperature between 85° and 90°C.
– The high-temperature heating causes the flocculation of the whey proteins in the milk: this process is visible as white curds form on the surface.
– At this point, the process is paused for 5 minutes.
– The curd is then extracted and placed into special containers for draining: these containers are specifically designed for ricotta processing and allow excess whey to drain, giving the ricotta its typical shape.
– After staying in the designated containers for 12 to 24 hours, the ricotta is ready to be consumed.
