The main processing stages of Campanian burrata can be summarized in the following steps:

– whole cow’s milk is heated;
– rennet is added and it is left to coagulate at a temperature of 38° – 39°C;
– the curd is broken and the whey is released, followed by a reduction into strips;
– the obtained product is left to rest for about 24 hours;
– the resulting paste is shredded by hand and mixed with pasteurized and centrifuged cream;
– the outer casing is obtained using sheets of stretched-curd paste properly shaped;
– afterwards, salting in brine is carried out for a few minutes.
