The main processing stages of mozzarella bocconcini can be summarized in the following steps:

– the buffalo milk is pasteurized at a temperature of about 85°C;
– lactic acid is produced by adding rennet and lactic ferments;
– after letting the obtained product rest, a compact surface is formed;
– the curd is broken into many parts within the whey;
– the obtained product is left to rest again until the solid part separates from the whey;
– the liquid is removed from the curd through the draining phase;
– an optimal pH value is reached after the curd is heated in a chamber at about 45°C with 100% humidity;
– the curd is transformed into stretched-curd paste with water at about 85°C;
– the curd is cut into strips and chopped, then mixed inside vats;
– afterwards, the obtained product is cut into many small mozzarellas;
– the mozzarella bocconcini are immersed in brine for the salting phase.
