Le fasi di lavorazione principali della provola 100% si possono racchiudere nei seguenti punti:

– Viene fatto coagulare latte vaccino intero crudo addizionato al caglio a temperatura di 30°C circa;
– La filatura della pasta viene svolta manualmente o meccanicamente donandole una forma sferoidale;
– La provola ottenuta viene sottoposta a salatura per immersione in salamoia;
– La fase di affumicatura dura circa 10 minuti e avviene sottoponendo la provola al fumo ottenuto dalla combustione di paglia umida;
