The production process of the pre-sliced Fiordilatte follows these steps:

– The process begins by heating whole cow’s milk to a temperature of about 38°C.
– Then, microbial rennet is added, and the mixture is allowed to coagulate for a variable time, ranging from 20 to 40 minutes.
– At this point, the curd undergoes natural fermentation, which lasts about 3 to 5 hours.
– The curd is cut into strips and then further worked.
– The resulting product undergoes mozzatura (cutting) and filatura (stretching): this phase can be done by hand or using machinery.
– The Fiordilatte is then hardened in containers filled with cold water and salted through immersion in brine.
– The entire process is entirely natural, with no chemical additives: this is why it takes so much time to produce high-quality Fiordilatte!
