How is the Fiaschetta made?

Scamorza is produced from raw or pasteurized cow’s milk, which is coagulated using a starter whey (the whey from the previous day’s production) and calf rennet. The curd is left to mature, then immersed in boiling water, stretched, and shaped by hand or machine. The scamorza is then placed in brine and marketed either immediately or after a short aging period of a few days.
