How is braided mozzarella made?

After the curd is obtained, it is covered with hot water at around 80–90°C; the curd becomes compact and is mixed until it is homogeneous. Once the excess water is removed, the skilled hands of the master cheesemakers step in, braiding the pasta filata in such a way as to give the mozzarella its distinctive braided shape.
